Cattle Lifecycle: 24 Months on Pasture & Our Bi-Annual Schedule

Industrial commercial beef is rushed: calves are pushed into confinement feedlots at 6 to 8 months old and fed high-starch grain rations to fatten quickly. True grass-fed beef cannot be rushed.

At Lund Angus Farm, our cattle live on pasture for a full 24+ months, growing naturally on Virginia mother’s milk and seasonal forage grasses. This slow, natural development creates dense muscle structure, healthy natural fat, and rich beef flavor that feedlot cattle simply cannot match.

To align with nature’s grazing cycles, we operate on a permanent bi-annual pickup schedule:

  • Spring Batch (May Pickup): Cattle finish on lush spring pasture flushes, perfect for filling the freezer ahead of summer grilling season.
  • Fall Batch (Late-November / Early-December Pickup): Cattle graze through late summer and crisp autumn pastures. This extended fall grazing develops deep, robust flavor and wholesome marbling right as families stock up for the winter holidays and cold weather.

Every order is dry-aged for 14 days at USDA-inspected Schrock’s Processing in Gladys, VA, concentrating flavor and ensuring peak tenderness on your table.

Bulk Beef Sizes for Roanoke & SML Households

  • Quarter Beef (1/4 Cow): ~85–100 lbs. of take-home beef ($300 reservation deposit; ~$1,165 estimated total). Includes steaks (Ribeye, NY Strip, Sirloin, Filet Mignon), savory roasts, short ribs, stew meat, and extra-lean 1-lb ground beef packages. Takes up just 3.5–4 cu. ft. of freezer space.
  • Half Beef (1/2 Cow): ~170–200 lbs. of take-home beef ($600 reservation deposit). Includes full custom cut sheets to choose your preferred steak thickness and roast sizes.
  • Whole Beef: ~340+ lbs. of take-home beef ($1,200 reservation deposit). The lowest cost per pound for maximum winter savings.

All beef orders are self-pickup in Gladys, VA at Schrock’s Processing. Deliveries and shipping are not available. Our upcoming Fall pickup window is November 30 – December 5 (order cutoff is Sunday, November 1st).

The Drive: Gladys is an easy, scenic 1 hour and 10-minute drive east from Roanoke via US-460 East through Bedford, then connecting to Route 24 or Route 43 South directly into Campbell County. From Smith Mountain Lake (Moneta/Huddleston), it’s just about 45 minutes east. Your beef is completely flash-frozen and commercial vacuum-sealed, so bringing standard coolers in your car will keep everything frozen solid for the trip home.
